Varalakshmi Javvarisi : javvari is made from the starch extracted from the pith (center) of the sago palm stems. It comes in the shape of small globules or pearls. It is almost pure carbohydrate and contains very small amount of protein, minerals and vitamins. Also known as Sago. These small pearl, white balls are extracted from the pith of the sago palm. When cooked they turn from their opaque white color to translucent, and become soft and spongy. It is most commonly used in fasting dishes such as javvari, when devout Hindus neglect from eating meats and poultry. In South India they are used to make small pappadam wafers called javvari. It is most commonly used in fasting dishes, such as javvari (generally made using soaked javvari, fried with potatoes, chilli and peanuts) and javvari.
